peanut butter cookies February 24 2016
March 1st is “National Peanut Butter Lover’s Day”! For me, that’s every day… In celebration, here is a five-ingredient, easy peasy Peanut Butter Cookie recipe that you’ll go nuts for!
What You’ll Need
- 2 cups / 1 jar of chunky or creamy Peanut Butter
- 1 ½ cup of packed Light Brown Sugar
- 2 large Eggs
- 1 ½ teaspoon Baking Soda
- ½ teaspoon Vanilla Extract
What You’ll Do
- Heat oven to 350 degrees
- Line your baking sheets with parchment paper to prevent cookies from sticking to pan (and for easy clean-up!)
- Add Peanut Butter, Brown Sugar, Eggs, Baking Soda and Vanilla Extract to a large mixing bowl
- Beat the ingredients with either an electric mixer or a large spoon (I find the spoon easier to clean)
- Drop teaspoons of cookie dough onto the parchment-lined baking sheets, spacing them 1 ½ inch apart to allow for spreading
- Bake 8 to 10 minutes, until cookies puff and edges begin to brown
- Let them cool for 5 minutes and transfer to a rack to cool (or plate to eat!)
