Healthy Recipes - Shrimp Tacos May 18 2015
Now that the Northeast weather is finally warmer (WOO!), I start favoring flavorsome foods that are easy to eat while enjoying the outside. One of my favorites is Shrimp Tacos – an easy dish that is both mobile and mouthwatering!
What You'll Need:
* 1 lb medium Shrimp (cooked)
* 1 (15-ounce) can Black Beans
* ½ cup fresh Salsa
* 1 medium Avocado
* 1/4 teaspoon freshly ground Black Pepper
* 1/4 cup chopped fresh Cilantro
* 2 tablespoons fresh Lime Juice
* 8 (medium-sized) flour tortillas
What You'll Do:
* Take the tails off the shrimp, should they have them, and set aside
* Drain and rinse the can of black beans
* Peel and dice the avocado into small chunks
* Combine the shrimp, beans and avocado and top with the black pepper
* Add the fresh salsa, lime juice and cilantro to the shrimp, bean and avocado mixture and toss together.
* Warm the tortillas in a low oven
* Fill tortillas with the shrimp mixture
* Enjoy!
