Grilled Fruit June 23 2015

When I was little, we once visited my father’s cousin Bob in Maine. That night, he grilled everything - from burgers and chicken for dinner, to fruit for dessert!  I didn’t appreciate his inventiveness then, but I do now.  Here’s to you, Bob – grilled pineapple and grilled strawberries.

GRILLED PINEAPPLE

What You'll Need:

  • 1 fresh pineapple
  • ¼ cup canned coconut milk (place in one bowl)
  • ½ cup cinnamon sugar mix (place in a second bowl)
  • Oil for grilling

What You'll Do:

  • First, peel and core the pineapple. Cut it into rings
  • Turn on your grill to medium heat
  • When grill reaches the medium heat, brush oil onto the grate to prevent sticking
  • Dip your pineapple slices first into the coconut milk, then into the cinnamon sugar, fully coating both sides
  • Put your coated pineapple slices onto the grill; cook each side for 6 minutes
  • Enjoy!

 

GRILLED STRAWBERRIES

What You'll Need:

  • 16 fresh strawberries
  • 2 tablespoons of balsamic vinegar
  • 2 tablespoons of sugar

 What You'll Do:

  • Turn on your grill to high heat
  • Clean the strawberries, but do not cut – keep them whole. Put them into a bowl
  • Pour the balsamic vinegar onto the strawberries, coating them.
  • Roll each of the balsamic strawberries in sugar
  • Put your coated strawberries onto the grill; cook for approximately 2 minutes until grill marks appear
  • Enjoy!
